About the Presenter: 
Beth Peterson is a Registered Dietitian and Board Certified Specialist in Sports Dietetics. She holds a Bachelors degree in Nutrition from Penn State University where she also ran cross-country and track and field. In addition to working as a Core Diet dietitian, Beth is a level 2 coach for QT2 Systems. Beth is a former professional triathlete at the 70.3 and IM distances and qualified and competed in the Ironman World Championships for the first time as a pro in 2014. She started her career as a dietitian at the University of Pittsburgh Medical Center where she worked clinically for 12 years covering everything from diabetic diet educations to managing intravenous nutrition in critically ill surgical and trauma patients. Beth has also been working with endurance athletes since 2009 and has thoroughly enjoyed combining her two passions of sport and nutrition!
